I’m Lina and this is where I decided to house my incessant thoughts on food.
In college, I became quite literally obsessed with learning about food. My roommates can attest to the countless hours spent overhearing Ina Garten and Bobby Flay hanging out with me in my room. Or on the treadmill at the gym. Or on my iPad while I sat in the kitchen.
In 2013, I was diagnosed with irritable bowel syndrome (IBS) and after my gastroenterologist prescribed me a medication that cost over $100 a month, I decided to look at more natural treatment options. Which led me to my gluten-free, dairy-free diet!
To say that this changed my life might sound exaggerated, but I really mean it. I lost close to 20 lbs, inches galore, I had noticeably more energy and now I can say that my gut feels about 75% healed. What’s fueled me sticking to this plan has been my fascination with making healthy food that tastes amazing and surprises even my non-GFDF companions (not to mention the awesome support of my friends & family).
But as a 20-something living at home, working full-time and going to grad school at night, I’m really not about complication–I need something easy and I need it inexpensively. No buying fancy bottles of coconut oil I’ll use only once or random xanthan gum that sounds like it came out of a sci-fi novel.
This is healthy eating, unfancified.
